Summary

Lead all aspects of the kitchen at The Archer, our community pub in Rainworth and live

teaching venue for Landmarks Specialist College. You will be responsible for running the

kitchen service, overseeing day to day operations and working alongside kitchen colleagues

and learners to prepare fresh food from scratch to a consistently high standard. The pub must

perform commercially, so you will help deliver a profitable kitchen that builds a reputation for

food that is better than home cooked, using fresh ingredients sourced locally and from our

own farm where appropriate. A key part of the role is teaching learners on programme how to

work safely, confidently and professionally in a pub kitchen, helping them build the
knowledge, routines and behaviours needed for employment in hospitality.

About Landmarks and The Archer

The Archer is Landmarks Specialist College’s community pub in Rainworth. It is a real

working pub, serving seven days a week, where young adults with additional needs

learn the skills, routines and professional behaviours needed to secure employment in

the pub trade following their time at The Archer.

Main responsibilities

Lead the kitchen
•  Lead all aspects of kitchen delivery, ensuring a high quality fresh food offer that meets

agreed GP, presentation, consistency and profitability standards

•  Maintain strong food safety systems, allergen control and HACCP, ensuring the

kitchen remains inspection ready at all times

•  Plan prep, organise and run kitchen service, allocate tasks and set clear standards for

kitchen colleagues and learners working in the kitchen

•  Manage stock, ordering, waste, equipment upkeep and kitchen records efficiently

and accurately

Teach, coach and develop
•  Work closely with kitchen colleagues to develop a strong, supportive and well

organised kitchen team through hands on coaching, direction and feedback
•  Teach learners on programme how to work in a pub kitchen, including food
preparation, service routines, hygiene, safety, allergens, teamwork and

professional conduct

•  Create a positive learning environment where learners can develop confidence,

independence and employability skills through real kitchen practice

Fresh food, menu and quality
•  Plan seasonal menus and specials using fresh ingredients, including produce and

livestock from our own farm and other locally sourced ingredients where appropriate
•  Work with colleagues to review dishes, respond to customer feedback and build a strong
reputation for food that is better than home cooked, fresh, appealing and commercially
effective

•  Promote a fresh food culture that values sustainability, minimises waste and

makes good use of local and college produced ingredients

Compliance and administration
•  Carry out regular checks of hygiene, storage, equipment and documentation to

maintain safe and effective kitchen practice

•  Keep training, audit and quality records up to date and report appropriately to the

Pub Manager

•  Contribute to kitchen budgeting, cost control, profitability and planning for improvement

Qualifications

Essential
•  Level 3 Food Safety (or willingness to achieve quickly)
•  Allergen awareness certification
•  A Level or equivalent vocational qualification in a cookery-related field

Desirable
•  GCSE English and maths

Experience

Essential
•  Minimum 3 years working in a pub kitchen
•  Proven experience of leading, coaching or training kitchen staff, junior colleagues

or apprentices

•  Menu development and delivery to GP targets

Desirable
•  Minimum 3 years in a senior role within a fresh food commercial kitchen
•  Experience teaching or training young people or adults in a practical workplace

setting

Skills

Essential
•  Calm and effective leadership with the ability to set standards and work

productively with kitchen colleagues and learners

•  Strong knowledge of HACCP, allergens, food hygiene and day to day kitchen

operations

•  Organised, reliable and disciplined, with strong time management and preparation

skills
