Job Description – Sous Chef Reports to: Hours: Type: Salary: Pub Manager 40hpw Permanent £26,375.00 - £32,293.00 The College is committed to safeguarding and promoting the welfare of children, young people and vulnerable adults and expects all staff and volunteers to share this commitment. Landmarks is an independent specialist college for young people with learning disabilities and difficulties. We require a Sous Chef to join our kitchen team to help us provide high quality food at reasonable prices. You will also need to have an interest in training others, because our pub is fundamentally a training environment where our learners are taught the skills and knowledge necessary to enter the hospitality and catering trade. We require someone with a can-do attitude and who can inspire others to be their best. You will work from The Archer in Rainworth, but from time to time you may be asked to visit our other sites so that you can liaise with colleagues who contribute towards the food offer at the pub. Landmarks operates from several sites across; Nottinghamshire, Derbyshire and South Yorkshire, with our main site located in Eckington, S21 4EF. Landmarks has several satellite provisions in Rotherham, Nottingham city Centre and an operating hospitality and catering facility in Rainworth, Mansfield. These environments enable the college to provide a range of personal and vocational training opportunities. Main Responsibilities: Your responsibilities will include, but are not restricted to: • Support the Head Chef by contributing ideas to for new menus , ensuring the best possible GP is achieved • Lead kitchen teams and shifts in the absence of the Head Chef • Run service to a high standard • Ensure the Kitchen is maintained to high professional standards, as well as ensuring all paperwork is completed accurately for EHO • Ensure the kitchen is inspection ready at all times • Link with the teaching team to ensure the skills learners develop are captured and celebrated Job Description – Sous Chef • With the General Manager and Head Chef raise the profile of The Archers’ work and support marketing events in order to recruit future learners and new customers In the absence of Head Chef you will be required to order and collect stock, ensuring the best possible value in terms of cost and quality. • • Carry out the duties and requirements of the post in compliance with Landmarks Equal Opportunities, Health & Safety, Child and Vulnerable Adult Protection and other policies and procedures. Person Specification The selection process will involve assessments being made on the extent to which applicants meet the criteria listed in the table below: Essential Criteria 1. Qualifications & Training o NVQ Level 2 or 3 in Professional Cookery or equivalent culinary qualification. o Food Hygiene Level 2 or higher. 2. Experience o Minimum 2 years of experience in a similar role within a high-paced, professional kitchen environment. o Experience in preparing, cooking, and presenting high-quality dishes. 3. Skills & Abilities o Strong knowledge of culinary techniques, kitchen operations, and food safety standards. o Excellent organisational and time-management skills. o Ability to work under pressure and in high-temperature environments. o Effective communication and teamwork skills to collaborate with kitchen and front-of-house staff. 4. Personal Attributes o High attention to detail, ensuring consistency and quality in every dish. o Passionate about food and cooking with a commitment to maintaining high standards. o Flexible and adaptable to meet the needs of the kitchen and restaurant. 5. Knowledge o In-depth knowledge of food allergens, dietary requirements, and health and safety legislation. Job Description – Sous Chef Desirable Criteria 1. Qualifications & Training o Additional culinary or hospitality-related qualifications. o Leadership or management training in a hospitality context. 2. Experience o Previous experience working in a kitchen team of similar size or larger. o Experience with menu development and assisting in planning new dishes. o Knowledge of sourcing quality ingredients and managing supplier relationships. 3. Skills & Abilities o Ability to manage stock levels and minimise waste. o Proficiency in using kitchen equipment and understanding of latest culinary trends. 4. Personal Attributes o Proactive in seeking continuous improvement and staying updated on industry best practices. o An interest in mentoring or training junior kitchen staff.
