As Restaurant Manager, you will play an important role in that journey, helping to shape standards, develop teams and contribute to the continued evolution of one of Scotland’s most iconic golf destinations.
About the Role
As Restaurant Manager, you will be responsible for the day-to-day operation of The Rookery, leading from the front to ensure exceptional guest experiences, strong team engagement and consistently high standards of service.
You will work closely with Head of Food & Beverage, Michael Saxon, and Head Chef, Jonathan Greer. Michael brings extensive international hospitality experience from luxury hotels and leading Scottish hospitality businesses, while Jonathan is a member of the Master Chefs of Great Britain with a track record of award-winning culinary excellence.
Together, they are building an ambitious food and beverage operation focused on quality, consistency and memorable guest experiences.

While your primary focus will be The Rookery, you will also have opportunities to support wider food and beverage operations across the Carnoustie Golf Links estate, gaining exposure to a variety of hospitality environments, events and projects.
From day-to-day restaurant operations to supporting major championships, corporate events and VIP guest experiences, no two days are the same at Carnoustie.
What You'll Be Doing
• Leading the day-to-day front of house operation of The Rookery, ensuring consistently high service standards.
• Coaching, developing and motivating the team to deliver exceptional guest experiences.
• Leading team briefings and creating a positive, high-performance culture.
• Maintaining strong product knowledge across menus, specials, cocktails and wines, encouraging confident recommendations and upselling.
• Anticipating guest needs, responding to feedback and resolving issues professionally and positively.
• Supporting revenue growth through effective operational planning and service delivery.
• Managing stock control, labour deployment and cost awareness.
• Overseeing reservations, service procedures, billing, cash handling and end-of-day processes.
• Championing hygiene, health and safety, cleanliness, presentation and brand standards.
• Identifying opportunities to improve products, service delivery and ways of working.
What We're Looking For
• Previous experience in a Restaurant Manager, Assistant Restaurant Manager, Food & Beverage Manager or similar hospitality leadership role.
• Strong front of house operational knowledge within a quality restaurant, hotel or hospitality environment.
• A natural leader who inspires confidence, supports colleagues and leads by example.
• Excellent communication and interpersonal skills.
• Strong organisational skills and the ability to remain calm and focused during busy service periods.
• A passion for hospitality and delivering memorable guest experiences.
• Commercial awareness with an understanding of labour, stock and cost control.
• Knowledge of food safety, health and safety and hospitality compliance standards.
