Chef/Kitchen Supervisor Dartmoor Zoo | Full-time | Permanent Role Description We are seeking a proactive and experienced Kitchen Supervisor to support the Food & Beverage Manager in the planning, organisation, and smooth operation of the Zoo’s kitchen, food outlets and for catering events. This role plays a key part in delivering high-quality food, maintaining our 5* hygiene standards, and ensuring an excellent visitor experience across our restaurant, on-site outlets and events. The successful candidate will lead by example, support the team, and help drive continuous improvement in food production and service. Why Join Dartmoor Zoo? Main Tasks Operational Support & Leadership - Support the Food & Beverage Manager and provide effective management of the kitchen and food outlets. - Supervise the day-to-day running of the kitchen, supporting the restaurant and food outlets, ensuring high standards of food production and service. - Organise and lead the team through preparation, service and daily close down procedures. - Step in to support wider operations when required, including sickness or break cover. Food Quality & Development - Maintain consistent food quality, presentation, and portion control. - Assist in developing and improving food production and service time. - Develop creative, and inspiring recipes for the restaurant, food outlets and special events and that reflect the Zoo’s ethos (subject to Management approval). - Support the planning and delivery of catering for special events including weddings and corporate functions, ensuring high-quality presentation and service. Food Safety & Compliance - Maintain the Zoo’s 5* EHO rating by ensuring exceptional food hygiene standards. - Ensure all cleaning, due diligence, and record-keeping are completed accurately and daily. - Adhere to all DZS policies, procedures, and legal requirements. Stock Control & Financial Responsibility - Assist with stock control, completing stocktakes and ordering to minimise waste and maintain profitability. - Manage surplus or slow-moving stock effectively. - Maintain positive supplier relationships. - Prepare and reconcile cash tills Training & Team Development - Support the induction and training of new staff. - Encourage team development and continuous improvement. - Demonstrate leadership that motivates staff and maintains morale in a busy environment. Employment Criteria Our ideal candidate will: - Hold an NVQ in Production Cooking (or equivalent qualification). - Have experience in food preparation within the hospitality sector. - Have experience developing and costing menus. - Have experience in supervising and leading a team. - Possess excellent interpersonal and communication skills. - Be computer literate, with working knowledge of Microsoft Office 365 and EPOS systems. - Demonstrate strong time management and the ability to remain calm under pressure. - Hold a valid Food Hygiene Certificate. - Be flexible and able to work evenings, weekends, and holidays as required. Desirable It would also be beneficial if you: - Hold a first aid qualification. - Have experience working in a busy tourism environment. - Have worked within an organisation with a strong ethical focus, charitable connection, or educational mission.
