Team: Catering / North Yorkshire Pullman Dining Train.
Location: Based in Grosmont, Whitby.
Contract: Permanent full time.
Salary: £30,000 per annum, based on 1898 annualised hours.
About the Role
This is a hands on role, with your passion for food and your appetite to provide an exceptional service, you will work with the assistant chef and Pullman Train Manager to deliver and develop the calendar of NYMR Pullman Dining & Charter services by planning menus, preparing, cooking, and ensuring each dish is fresh, tasty and beautifully presented every time whilst maintaining excellent food hygiene practices.
The Pullman is one lunchtime service per day usually Tues/Wed/Sat & Sundays during our main operating season, with an additional working day for prep/admin. There are 6 evening services which run instead of the lunchtime service. Each Pullman service is a three-course meal, pre-ordered in advance, so you will know exactly how many Pullman customers you are catering for, and we currently have a maximum of 113 covers per service, plus an onboard charter carriage of up to 18 pre-ordered covers.

You Will
- Manage and oversee all aspects of the Pullman Kitchen service with a hands-on approach.
- Report to, liaise with and work under the instruction of the Pullman Train Manager to ensure efficient service operation between the kitchen and dining carriages.
- Oversee and manage a small team of assistants within the Pullman kitchen.
- Prepare, cook and serve high quality meals including starters and desserts from the Pullman galley kitchen for pre-ordered meals (currently for up to 113 customers).
- Oversee and manage the delivery of the catering for the Charter services.
- Create, write and cost menus for the different Pullman services, at the required numbers, along with cooking and preparing trial dishes to ensure sustainability.
- Manage all stock and ensure stock rotation systems are operated.
- Manage and record wastage.
- Maintain the high standard of cleanliness of all areas.
- Source local products and liaise with suppliers to ensure best prices and quality of produce.
This position is based in Grosmont Station & Pickering Offices (if required) with the long-term view to run from Pickering. But you may be required to work in other locations on NYMR or on NYMR tasks off the railway.

More Information
Hours of work - during the main operating season (March – November) are a maximum of 45 hours per week (includes weekends). November to February will be reduced hours and will be flexible as required by the business. Your hours may vary, but your salary is paid in 12 equal monthly instalments.
