As our Kitchen Manager, you will oversee the kitchen operations at our designated premises, with the role being a 50:50 split between operational duties and admin/compliance duties.
You will lead and direct the culinary team to ensure that high-quality food and service is consistently delivered across all outlets (cafes, canteens, etc.) and for all commercial hire events (sandwich lunches, buffets, canape receptions, Gala dinners etc.).
You will be responsible for ensuring overall compliance with all kitchen food safety, allergen, and health and safety processes, policies and procedures, ensuring that exemplary standards and accurate records are maintained.
You will be responsible for all kitchen stock management processes at the designated premises, to include stocktakes, ordering, and accurate maintenance of stock systems, records and invoices.
You will be involved in the development, creation and delivery of menus and new concepts across the sites, supported by the culinary team and Group Food & Beverage Manager.
This role is part of the Food & Beverage team and is line managed by the Food & Beverage Operations Manager. You will line manage all kitchen team.
Key Responsibilities- Responsible for overseeing the implementation of new menus, including accurate creation and entry of recipes onto stock systems
- Responsible for creation of DSS/recipe crib sheets for the culinary team, and ensuring that the kitchen team adhere to these at all times
- Responsible for the kitchen rota creation and management, ensuring that labour targets are met
- Responsible for line management of kitchen teams, to include all HR duties as required
- Working closely with the Group F&B Manager and F&B Operations Managers and F&B Supervisors to ensure that high-quality food and service is consistently delivered
- Responsible for overall kitchen compliance with all food safety processes, policies and procedures, including the accurate completion of all required food safety paperwork. Being proactive in liaising with EHO as required, and ensuring that you stay up-to-date and compliant with any legislation changes
- Responsible for overall kitchen compliance with all required allergen processes and documentation, including the creation and maintenance of accurate allergen information matrixes
- Responsible for overall kitchen compliance with all health & safety policies, processes and procedures, ensuring responsibility for yourself and others, and working in a safe and efficient manner at all times
- Completion of regular stocktakes, to include ensuring accurate counting, inputting, reconciliation and variance investigation
- Responsible for the ordering of stock and reconciliation of deliveries, ensuring that accurate delivery checks and records are maintained
- Responsible for accurate inputting and updating of data into the EPOS stock system (ingredients, recipes, orders, deliveries, wastage, transfers etc.)
- Responsible for procurement of all food and kitchen equipment items, ensuring adherence with all procurement processes and policies
- Maintaining and developing existing supplier relationships, and exploring and engaging with new suppliers as required.
